Serve up crispy potato latkes for a savory breakfast treat.

Step 1

Thaw potatoes, drain and pat dry.

Step 2

In large bowl stir together potatoes, eggs and onion. Add salt, if desired.

Step 3

Add pancake mix; stir to combine well.

Step 4

Heat oil in large skillet over medium heat.

Step 5

For each pancake, pour about 1/4 cup batter into skillet and flatten with spatula.

Step 6

Cook 2 to 3 minutes on each side or until golden brown.
